Raw beet salad

2 c. coarsely shredded raw beets

4 c. shredded lettuce

1/3 c. olive oil

1/4 c. vinegar

1 tsp. sugar

Combine vinegar, oil, and sugar. Mix with beets and marinate for half hour. Add salt and pepper to taste. Toss with lettuce just before serving.

Glazed carrots

2 T. butter

1/4 c. brown sugar

3 c. cooked carrots, baby or cut

Drain carrots and add butter and sugar. cook on low hit for 5 minutes turning carrots to cover.

Seasoned potatoes

4 medium chunked potato

1/3 c. olive oil

1 T. garlic powder

1 tsp. onion powder

Put potatoes in casserole pan or the like and add oil and seasoning. Turn potatoes until coated and place in oven @ 350. Turn potatoes occasionaly until tender.

For a colorfull presentation use 2 red and 2 white potatoes with skin on and add chopped scallion.
